  • 1 cup sugar
  • 1 egg
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and lemon zest until well combined.
  4. Combine the flour, baking powder, and salt in another bowl.
  5. Add the dry mixture to the creamed mixture, blending until just combined.
  6. Fold in the fresh raspberries and lemon juice gently.
  7. Scoop spoonfuls of the dough onto a greased baking sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes or until lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added flavor, experiment with lemon zest or substitute half of the raspberries with blueberries.
