A creamy and tangy dessert that captures the essence of summer with fresh lemons and vibrant toppings.

Ingredients

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • Fresh berries (strawberries, blueberries, or raspberries)
  • Fresh mint leaves for garnish

Instructions

  1. Combine heavy cream and granulated sugar in a saucepan over medium heat. Stir until the sugar dissolves and the mixture just begins to boil.
  2. Remove the saucepan from heat and add the fresh lemon juice and lemon zest. Stir well to combine.
  3. Allow the mixture to cool for a few minutes, then pour it into serving dishes or glasses.
  4. Refrigerate the posset for at least 4 hours or until set.
  5. Serve chilled, topped with fresh berries and mint.

Notes

For best flavor, use freshly squeezed lemon juice. Store in the refrigerator for up to 3 days.
