A delightful fusion of crispy chicken coated in Romano cheese & breadcrumbs, infused with the bright flavors of lemon.

  • 4 boneless, skinless chicken breasts
  • 1 cup Romano cheese, grated
  • 1 cup breadcrumbs
  • 2 lemons (zested and juiced)
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs, lemon juice, salt, and pepper.
  3. Mix the breadcrumbs and grated Romano cheese in another bowl.
  4. Dip each chicken breast into the egg mixture and then coat them in the breadcrumb and cheese mixture.
  5. Heat olive oil in a skillet and fry the chicken until golden brown, about 4-5 minutes on each side.
  6. Transfer chicken to a baking dish, drizzle with lemon zest, and bake for 15-20 minutes until cooked through.
