A simple yet flavorful side dish featuring baby potatoes roasted with lemon zest, rosemary, and thyme.

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the baby potatoes in half and place them in a large bowl.
  3. Mix together the olive oil, lemon juice, lemon zest, rosemary, thyme, salt, and pepper in a small bowl.
  4. Pour the mixture over the potatoes and toss until they are evenly coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast in the oven for about 25-30 minutes until golden brown and tender, tossing occasionally.
  7. Remove from the oven, garnish with fresh parsley, and serve warm.
