A vibrant and nutritious dish featuring quinoa, chickpeas, and a refreshing lemon herb dressing, perfect for busy weeknights or family gatherings.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 can chickpeas, drained and rinsed
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove its natural coating.
  2. Combine the rinsed quinoa and vegetable broth in a pot and bring to a boil, then reduce to a simmer for 15 minutes.
  3. Mix the fluffy quinoa, chickpeas, lemon juice and zest, olive oil, garlic, and parsley in a large bowl.
  4. Season with salt and pepper to taste.
  5. Serve warm or at room temperature.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to a month.
