A quick and healthy dish featuring flaky cod fillets baked with a zesty lemon and garlic mixture.

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the olive oil, minced garlic, lemon juice, salt, and pepper in a bowl.
  3. Arrange the cod fillets on a baking sheet.
  4. Pour the lemon-garlic mixture generously over the cod fillets.
  5. Bake for 12-15 minutes, or until the fish flakes easily.
  6. Garnish with fresh parsley before serving.
