A light and refreshing lemon pudding made with cottage cheese and Greek yogurt, perfect for summer picnics.

Ingredients

  • 1/2 cup Greek yogurt
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine your ingredients in a mixing bowl: cottage cheese, Greek yogurt, lemon juice, lemon zest, honey, vanilla extract, and a pinch of salt.
  2. Blend the mixture until smooth and creamy using a blender or food processor.
  3. Taste the pudding and adjust the sweetness if necessary by adding more honey or maple syrup.
  4. Chill the mixture in bowls or glasses for at least 30 minutes in the fridge.
  5. Serve the pudding garnished with extra lemon zest or mint leaves for added color and freshness.

Notes
