A vibrant and tangy lemon chia pudding that’s creamy and bursting with citrus flavor, made easy in a pressure cooker.

Ingredients

  • 1/4 cup Chia seeds
  • 1/2 cup Coconut milk
  • 3/4 cup Cottage cheese
  • Zest of 1 lemon
  • 1/4 cup Lemon juice
  • 1 to 2 tbsp Maple syrup or honey
  • 1 tsp Vanilla extract
  • Pinch of Turmeric (optional)

Instructions

  1. Prepare your ingredients by gathering them and measuring them out.
  2. Mix the chia seeds, coconut milk, and cottage cheese in a bowl until smooth.
  3. Add the lemon zest, lemon juice, maple syrup or honey, and vanilla extract. Stir in turmeric if using.
  4. Pour the mixture into the pressure cooker and cook at high pressure for 5 minutes.
  5. Chill the pudding in the refrigerator for 1-2 hours after cooking.
  6. Serve with fresh fruit or nuts on top.

Notes

Store leftovers in an airtight container for up to 3 days. Stir before serving if the chia seeds settle.
