Delicious lemon bars with a buttery crust and tangy lemon filling, perfect for summer days.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a bowl, mix the all-purpose flour and powdered sugar.
  3. Add the melted butter and mix until crumbly. Press into the bottom of the dish.
  4. In another bowl, whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt.
  5. Pour the lemon mixture over the crust and spread evenly.
  6. Bake for 20-25 minutes until set and edges are golden. Cool completely before refrigerating.

Notes

Serve chilled or at room temperature dusted with powdered sugar. Pairs well with green tea or vanilla ice cream.
