A delightful and comforting cheesy casserole that repurposes leftover turkey with broccoli and mushrooms, baked to perfection.

Ingredients

  • 1 cup Chopped Mushrooms
  • 2 cups Frozen Broccoli Florets
  • 2 tablespoons Olive Oil
  • 2 cloves Minced Garlic
  • 3 cups Shredded Cooked Turkey
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Ground Black Pepper
  • 1 cup Shredded Cheese
  • 1/2 cup Heavy Cream
  • 2 tablespoons Minced Parsley

Instructions

  1. Sauté the vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped mushrooms and stir for about 5 minutes until tender. Toss in the minced garlic and sauté for an additional minute.
  2. Combine broccoli and turkey: Stir in the frozen broccoli florets and shredded turkey. Season with sea salt and ground black pepper. Cook for another 5 minutes.
  3. Create the cheesy sauce: In a separate bowl, combine the heavy cream and shredded cheese. Stir until smooth.
  4. Mix everything together: Pour the cheesy mixture over the turkey, broccoli, and mushrooms in the skillet and fold gently.
  5. Bake to perfection: Transfer the mixture to a greased baking dish and bake at 350°F (175°C) for 20-25 minutes, until golden and bubbly.
  6. Garnish and serve: Once baked, remove from the oven, sprinkle with parsley, let cool briefly, and serve warm.

Notes

Make ahead of time and store in the fridge for quick reheating. You can also use rotisserie chicken as a time-saving alternative.
