Ingredients
Scale
1 pound ground beef
1/2 cup panko breadcrumbs
1 large egg
3 cloves garlic, minced
1 tablespoon ginger, minced
1/4 cup green onions, chopped
1/4 cup soy sauce
1/4 cup brown sugar
2 tablespoons sesame oil
3 cloves garlic, minced (for sauce)
1 tablespoon ginger, minced (for sauce)
1/4 cup mayonnaise
2 tablespoons sriracha
1 tablespoon rice vinegar
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine ground beef, panko breadcrumbs, egg, garlic, ginger, and green onions. Mix until well combined.
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
Bake for 20-25 minutes or until golden brown and cooked through.
While the meatballs are baking, prepare the Korean BBQ sauce by combining soy sauce, brown sugar, sesame oil, garlic, and ginger in a saucepan over medium heat. Stir until the sugar is dissolved and the sauce is warm.
Once the meatballs are done, toss them in the warm BBQ sauce until well coated.
For the spicy mayo dip, mix together mayonnaise, sriracha, and rice vinegar in a small bowl.
Serve the meatballs hot with the spicy mayo dip on the side.
Notes
Don’t skip the panko breadcrumbs—they add lovely texture. Feel free to adjust spices for your taste.
