1 pound ground beef
1/2 cup panko breadcrumbs
1 large egg
3 cloves garlic, minced
1 tablespoon ginger, minced
1/4 cup green onions, chopped
1/4 cup soy sauce
1/4 cup brown sugar
2 tablespoons sesame oil
3 cloves garlic, minced (for sauce)
1 tablespoon ginger, minced (for sauce)
1/4 cup mayonnaise
2 tablespoons sriracha
1 tablespoon rice vinegar
Instructions
Preheat your oven to 400°F (200°C).
Combine in a large bowl ground beef, panko breadcrumbs, egg, garlic, ginger, and green onions. Mix until well combined.
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
Bake for 20-25 minutes or until golden brown and cooked through.
Prepare the Korean BBQ sauce by combining soy sauce, brown sugar, sesame oil, garlic, and ginger in a saucepan over medium heat. Stir until the sugar is dissolved and the sauce is warm.
Coat the meatballs in the warm BBQ sauce until well coated.
Make the spicy mayo dip by mixing together mayonnaise, sriracha, and rice vinegar in a small bowl.
Serve the meatballs hot with the spicy mayo dip on the side.

These meatballs are perfect on their own, but serve them with steamed jasmine rice and pickled vegetables for a complete meal.
