  • 15 sheets graham crackers, crushed
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons sugar
  • Pinch of salt
  • 6 ounces cream cheese, room temperature
  • 14 ounces sweetened condensed milk
  • 4 egg yolks
  • ½ cup key lime juice
  • 1 tablespoon lime zest
  • ½ teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Crush the graham crackers into fine crumbs and mix them with melted butter, sugar, and salt. Press into the bottom of the pan and bake for 10 minutes.
  3. Beat the cream cheese in a bowl until smooth, then gradually whisk in the sweetened condensed milk.
  4. Add the egg yolks one at a time, mixing well after each addition.
  5. Stir in key lime juice, lime zest, and vanilla extract until fully combined.
  6. Pour the filling over the crust and bake for 15-18 minutes until the edges are set and the center jiggles slightly.
  7. Cool the pie slightly, then refrigerate for at least 2 hours to firm up.
