A rich and creamy slow cooker dish featuring chicken, cream cheese, and ranch seasoning – perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 (8 ounce) package cream cheese, softened
  • 1 (1 ounce) packet ranch seasoning mix
  • 1/2 cup water
  • 1/2 cup bacon, cooked and crumbled
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Once hot, sear both sides of the chicken until golden brown, about 3-4 minutes per side.
  2. Transfer the seared chicken to a slow cooker. Top with softened cream cheese, ranch seasoning, and water.
  3. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until fork-tender.
  4. Shred the chicken directly in the slow cooker using two forks and stir gently to combine with the creamy ranch mixture.
  5. Add crumbled bacon, shredded cheddar, and chopped green onions. Mix until everything is melted and warm.
  6. Serve warm as-is or with cauliflower rice, in lettuce wraps, or pair with keto sides.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can also be made in an oven-safe dish at 350°F for about 1.5 hours.
