A cozy, creamy slow-cooker dish with chicken, cream cheese, and ranch seasoning for a satisfying meal.

  • 2 pounds boneless, skinless chicken breasts
  • 1 (8 ounce) package cream cheese, softened
  • 1 (1 ounce) packet ranch seasoning mix
  • 1/2 cup water
  • 1/2 cup bacon, cooked and crumbled
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Once the oil is hot, sear both sides of the chicken until they are golden brown, about 3-4 minutes per side.
  2. Transfer the seared chicken to a slow cooker. Top the chicken with softened cream cheese, ranch seasoning, and the water.
  3. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be fork-tender when done.
  4. Shred the chicken directly in the slow cooker using two forks. Stir gently to combine the chicken with the creamy ranch mixture.
  5. Add the crumbled bacon, shredded cheddar, and chopped green onions to the slow cooker. Mix until everything is melted and warm.
  6. Serve warm as-is, or spoon over cauliflower rice, stuff into lettuce wraps, or pair it with your favorite keto sides.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. You can reheat in the microwave or stovetop.
