2 pounds boneless, skinless chicken breasts
1 (8 ounce) package cream cheese, softened
1 (1 ounce) packet ranch seasoning mix
1/2 cup water
1/2 cup bacon, cooked and crumbled
1/2 cup cheddar cheese, shredded
1/4 cup green onions, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Sear Chicken: Start by heating the olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear both sides until they turn a lovely golden brown.
Add to Slow Cooker: Once the chicken is beautifully seared, transfer it to the slow cooker. Layer on top of the chicken the softened cream cheese, ranch seasoning, and water.
Cook Low & Slow: Cover your slow cooker and let it cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fork-tender.
Shred & Mix: Using two forks, shred the chicken directly in the slow cooker. Stir until well combined with the creamy mixture.
Add Bacon & Cheese: Add in the crumbled bacon, shredded cheddar, and chopped green onions. Mix until everything is melted and warm.
Serve & Enjoy: Serve warm as is, over cauliflower rice, or in lettuce wraps.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. This dish also freezes well for up to 3 months.
