A delightful keto-friendly treat that combines the sweetness of toffee with a festive crunch, perfect for holiday gatherings.

  • 1 package of keto-friendly saltine crackers
  • 1 cup unsalted butter
  • 1 cup granulated erythritol or preferred keto sweetener
  • 1 cup sugar-free chocolate chips
  • ½ cup chopped nuts (walnuts, pecans, or almonds)
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Arrange the saltine crackers in a single layer on the lined baking sheet.
  4. Melt the unsalted butter in a medium saucepan over medium heat.
  5. Add the erythritol and stir until it comes to a boil.
  6. Allow the mixture to boil for 3 minutes without stirring.
  7. Remove from heat and pour evenly over the saltine crackers.
  8. Place the baking sheet in the oven and bake for 5-7 minutes until bubbly.
  9. Sprinkle chocolate chips evenly over the hot toffee and allow them to melt.
  10. Spread the melted chocolate evenly across the toffee.
  11. Sprinkle chopped nuts and a light sprinkle of sea salt on top.
  12. Allow to cool completely at room temperature before breaking into pieces.

Notes

For faster cooling, refrigerate for about 30 minutes. Customize nuts and toppings as desired for variations.
