A fresh and nutritious kale salad tossed with tangy lemon, rich Parmesan, and crunchy walnuts, perfect for any occasion.

Ingredients

Scale
  • 1 bunch of kale
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup walnuts, chopped
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Prepare the kale by removing the stems and chopping the leaves into bite-sized pieces.
  2. Mix the dressing by combining the kale with olive oil, lemon juice, salt, and pepper in a large bowl.
  3. Massage the dressing into the kale gently for a few minutes until tender.
  4. Add the grated Parmesan, walnuts, and cherry tomatoes to the kale.
  5. Toss everything together until well mixed, and serve.

Notes

Best consumed fresh but can be stored in an airtight container in the fridge for 1-2 days.
