Easy and fluffy cornbread pancakes that create a comforting breakfast experience.

  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • Butter or oil for frying

Instructions

  1. Combine the Jiffy corn muffin mix, milk, egg, and vegetable oil in a mixing bowl to create a batter.
  2. Heat a skillet over medium heat and add butter or oil for frying.
  3. Pour about 1/4 cup of batter onto the skillet for each pancake.
  4. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  5. Flip the pancake and cook for another 1-2 minutes until golden brown.
  6. Serve warm with syrup or toppings of your choice.

Notes

For fluffy pancakes, don’t overmix the batter. Serve with a variety of toppings for a delicious twist.
