A warm and comforting Italian tortellini soup made with ground sausage, kale, and creamy broth, perfect for weeknight dinners.

Ingredients

  • 1 pound ground Italian sausage
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 2 cups kale, chopped
  • 2 cups tortellini (frozen or fresh)
  • 1 cup heavy cream

Instructions

  1. Sauté the sausage and onion in a large pot over medium-high heat until the sausage is browned and the onion is soft. Drain any excess grease.
  2. Add the minced garlic to the pot and cook for an additional minute. Stir in a tablespoon of flour.
  3. Pour in the chicken broth, scrapping any browned bits from the bottom. Bring to a simmer.
  4. Stir in the heavy cream until the soup is silky.
  5. Mix in the kale and tortellini, allowing to simmer for 3-5 minutes until cooked through.
  6. Season to taste with salt before serving.

Notes

Serve with crusty bread or a simple salad. Add Parmesan cheese or red pepper flakes for extra flavor.
