  • 1 lb Italian sausage (sweet or spicy)
  • 1 bell pepper (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (14 oz) diced tomatoes
  • 1 cup spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the bow tie pasta according to package instructions; drain and set aside.
  2. Brown the Italian sausage in a large skillet over medium heat until browned, breaking it apart with a spoon.
  3. Add the chopped onion, bell pepper, and minced garlic to the skillet; sauté until vegetables are softened.
  4. Stir in the diced tomatoes and spinach, cooking until the spinach wilts.
  5. Toss the cooked pasta into the skillet, mix well, and season with Italian seasoning, salt, and pepper.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

This dish can be stored in the fridge for up to 3 days. For a spicy kick, use hot Italian sausage and add red pepper flakes.
