A comforting roasted Italian sweet potato soup that nourishes both body and soul.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Croutons, for garnish
  • Fresh herbs, for garnish
  • Cream, for drizzling

Instructions

  1. Cube the sweet potatoes.
  2. Roast the sweet potatoes at 400°F (200°C) for about 25 minutes.
  3. Sauté the chopped onions until softened.
  4. Add minced garlic and Italian herbs, and sauté until fragrant.
  5. Combine the roasted sweet potatoes with vegetable broth and simmer.
  6. Season with salt and pepper to taste.
  7. Serve in bowls topped with croutons, cream, and fresh herbs.

Notes

For a smoky flavor, add a pinch of smoked paprika before blending.
