A delightful blend of crispy chicken coated in a rich peanut butter sauce, perfect for family dinners or impressing guests.

  • 1 pound Boneless chicken thighs
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup All-purpose flour
  • 1 cup Panko breadcrumbs
  • 1/2 cup Peanut butter
  • 1/4 cup Sweetened condensed milk
  • 3 tablespoons Soy sauce
  • 1/4 cup Water

Instructions

  1. Prepare the Peanut Sauce: In a small bowl, combine the peanut butter, sweetened condensed milk, soy sauce, and water. Mix thoroughly until smooth and set aside.
  2. Pound the chicken to about ½-inch thickness using a meat mallet for even cooking.
  3. Whisk together the eggs, all-purpose flour, salt, and 1 tablespoon of peanut butter in a shallow dish for the dredging station.
  4. Dip each flattened chicken thigh into the egg wash, then press into panko breadcrumbs until fully coated.
  5. Heat about 1 inch of oil in a pan to 350°F (175°C).
  6. Fry the breaded chicken thighs for 2-3 minutes on each side until golden brown and cooked through.
  7. Remove from the pan, slice, and drizzle with peanut sauce. Serve immediately.

Notes

Serve with steamed jasmine rice or a fresh garden salad. Store leftovers in an airtight container in the fridge for up to 3 days.
