  • 1 pound ground beef
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 6 cloves garlic, minced (3 for meatballs, 3 for sauce)
  • 2 tablespoons ginger, minced (1 for meatballs, 1 for sauce)
  • 1/4 cup green onions, chopped
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon rice vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine ground beef, panko breadcrumbs, egg, minced garlic, minced ginger, and chopped green onions in a large bowl.
  3. Scoop a portion of the mixture and roll it into balls about 1 inch in diameter.
  4. Place each meatball on a baking sheet.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. Prepare the Korean BBQ sauce by combining soy sauce, brown sugar, sesame oil, garlic, and ginger in a saucepan over medium heat.
  7. Remove the meatballs from the oven and toss them in the warm BBQ sauce.
  8. Mix together mayonnaise, sriracha, and rice vinegar in a small bowl to create the spicy mayo dip.
  9. Serve the meatballs hot with the spicy mayo dip.

Notes

These meatballs can be served with rice, stir-fried vegetables, or a light Asian-style salad. Allow leftovers to cool and store in an airtight container for up to 3 days in the fridge.
