A flavorful chicken curry with tender chicken thighs in a creamy coconut sauce, perfect for cozy dinners.

  • 1 kg Boneless Chicken Thighs
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Curry Powder
  • 1 can Canned Tomatoes
  • 400 ml Coconut Milk
  • To taste Salt & Pepper
  • A handful Fresh Cilantro (optional)

Instructions

  1. Begin by gathering and prepping your ingredients. Dice the onion finely, crush the garlic cloves, and grate the fresh ginger.
  2. In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and cook until it turns soft and translucent, about 5 minutes.
  3. Toss in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Sprinkle in the curry powder and stir into the onion mixture, allowing the spices to bloom for a minute.
  5. Cut the boneless chicken thighs into chunks, season with salt and pepper, and add them to the pot. Sear for about 5-7 minutes until golden.
  6. Pour in the can of crushed tomatoes followed by the coconut milk. Stir until well combined and bring to a gentle simmer.
  7. Reduce the heat to low and let your curry simmer for 20 minutes, stirring occasionally.
  8. Once done, chop fresh cilantro and sprinkle it on top before serving.

Notes

Serve with basmati rice or warm naan bread. This curry stores beautifully and can be frozen for up to 3 months.
