A delightful fusion of traditional Irish flavors wrapped in crispy tortillas, featuring corned beef, fresh cabbage, and creamy mashed potatoes.

  • 4 pieces Tortillas
  • 2 cups Russet Potatoes (peeled and cubed)
  • 1 cup Corned Beef (shredded)
  • 1 cup Cabbage (finely chopped)
  • 1 piece Onion (thinly sliced)
  • 1 cup Cheddar Cheese (shredded)
  • 1/2 cup Thousand Island Dressing
  • 2 tablespoons Chives (fresh, chopped)
  • 1 cup Oil (for frying)

Instructions

  1. Prepare the Potatoes: Wash, peel, and cube the russet potatoes. Cook them in salted boiling water for about 10 minutes or until tender. Drain well.
  2. Blanch the Vegetables: Add finely chopped cabbage and thinly sliced onions to the same water you used for the potatoes. Cook for an additional 5 minutes, then drain thoroughly.
  3. Create Creamy Mash: Combine the drained potatoes with shredded cheddar cheese in a mixing bowl. Mash until creamy and add salt to taste.
  4. Assemble the Tacos: Spread Thousand Island dressing on one half of a tortilla. Layer with the creamy mashed potatoes, shredded corned beef, blanched cabbage, and onions. Carefully fold the tortilla to enclose the filling.
  5. Fry to Perfection: Heat oil in a skillet over medium heat. Fry each taco for about 30 seconds on each side until golden brown and crispy.
  6. Garnish & Serve: Sprinkle tacos with fresh chopped chives and serve immediately while warm and crispy.

Notes

These tacos are perfect on their own but can be paired with a green salad or simple roasted vegetables.
