A vibrant Mexican breakfast featuring warm tortillas, creamy avocado, and fried eggs topped with zesty salsa.

Ingredients

  • 2 Tortillas
  • 4 Eggs
  • 1 cup Black beans
  • 1 cup Salsa
  • 1 Avocado
  • ¼ cup Cilantro
  • ½ cup Cheese
  • 1 Lime

Instructions

  1. Warm the tortillas until they’re pliable in a dry skillet over medium heat for about 30 seconds on each side.
  2. Heat the black beans in a skillet over medium heat until heated through, about 5-7 minutes.
  3. Fry the eggs sunny side up in another pan, cooking until whites are set and yolks are runny, about 3-4 minutes.
  4. Assemble by placing a warm tortilla on a plate, adding black beans, and topping with a fried egg.
  5. Spoon salsa over the egg, add avocado slices, cheese, cilantro, and a squeeze of lime juice.

Notes

Serve with crispy hash browns or fresh fruit; great with coffee or a mimosa. Leftovers can be stored separately.
