  • 4 salmon fillets
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 tablespoon lime juice (for salsa)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Whisk together the honey, 2 tablespoons of lime juice, lime zest, salt, and pepper until well combined.
  3. Brush the salmon fillets with the honey lime mixture on both sides.
  4. Place the salmon on the grill and cook for about 4-5 minutes per side.
  5. Combine diced mango, red onion, cilantro, jalapeño (if using), and 1 tablespoon of lime juice in a bowl.
  6. Serve the grilled salmon topped with mango salsa.

Notes

Try customizing the salsa by adding fruits like pineapple or avocado. If you prefer chicken or tofu, feel free to substitute.
