  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)
  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • 2 ripe avocados, sliced

Instructions

  1. Marinate the chicken: In a bowl, combine honey, fresh lime juice, lime zest, garlic, salt, and pepper. Whisk together until smooth. Add chicken breasts, ensuring they are well-coated. Let soak for at least 15 minutes.
  2. Cook the chicken: Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for about 6-7 minutes on each side or until golden brown and cooked through. Let rest for a few minutes.
  3. Prepare the avocado and rice: Toss avocado slices with lime juice, salt, and pepper. In another bowl, combine cooked rice with chopped cilantro and an extra splash of lime juice. Season to taste.
  4. Assemble the stack: Start with a layer of cilantro rice on a plate, followed by seasoned avocado slices, and then sliced honey lime chicken. Repeat layers for a tall stack.
