A delightful balance of honey lime glazed chicken, creamy avocado, and fresh herbs layered over rice, perfect for gatherings or casual dinners.

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)
  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • 1 tablespoon lime juice
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Marinate the chicken: In a bowl, mix the honey, fresh lime juice, lime zest, minced garlic, salt, and pepper. Add the chicken breasts, ensuring each piece is well coated. Cover and let marinate for at least 15 minutes.
  2. Cook the chicken: Heat a little oil in a skillet over medium heat. Add the marinated chicken pieces and cook for about 6-7 minutes on each side, or until the chicken is cooked through. Let it rest before slicing.
  3. Prepare the rice with coriander: In a small bowl, combine the cooked rice, fresh chopped coriander, lime juice, salt, and pepper. Stir gently until well mixed.
  4. Assemble the avocado: Slice the ripe avocados and drizzle them with lime juice, seasoning them with salt and pepper.
  5. Build your stack: On a plate, layer the coriander rice, sliced honey lime chicken, and top with avocado slices. Garnish with fresh coriander and lime if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of lime juice.
