  • 2 tablespoons unsalted butter (or olive oil for a dairy-free option)
  • 34 slices bacon, chopped
  • 1 tablespoon honey
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Start by peeling those shallots. A quick tip? Use a sharp knife to slice off the root ends make peeling easier. Once peeled, halve them lengthwise to enhance their surface area.
  2. In a large skillet over medium heat, add your chopped bacon. Sauté until it’s perfectly crispy, about 5-7 minutes. Remove the bacon, leaving the rendered fat behind in the pan.
  3. Using the skillet with the bacon fat, turn the heat down to medium-low and add the shallots cut-side down. Sauté for 5-6 minutes until they begin to caramelize and become golden brown.
  4. Once your shallots are beautifully caramelized, add the honey, Worcestershire sauce, and balsamic vinegar to the pan. Stir gently to combine.
  5. Preheat your oven to 400°F (200°C). Transfer the glazed shallots to a baking dish, and place them in the oven for about 10 minutes.
  6. Once out of the oven, stir in the crispy bacon and adjust the seasoning with salt and freshly ground black pepper. Serve warm.

Notes

For richer flavor, consider adding fresh herbs like thyme or rosemary during the sautéing step. The dish can be made dairy-free by using olive oil instead of butter.
