Delicious roasted vegetables infused with honey and garlic, perfect as a side or a healthy main dish.

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup carrots, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the broccoli florets, cauliflower florets, sliced carrots, red bell pepper, and minced garlic in a large bowl.
  3. Drizzle the olive oil and honey over the vegetables, then sprinkle with salt and black pepper.
  4. Toss everything until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 20 to 25 minutes, turning halfway through, until tender and caramelized.
  7. Remove from the oven and sprinkle with chopped parsley before serving.

Notes

These roasted vegetables can be served alongside grilled chicken or fish, or added to grain salads. They can also be stored in an airtight container in the fridge for up to 3 days.
