A comforting and flavorful dish featuring juicy chicken in a sweet and savory honey garlic sauce, complemented by caramelized Brussels sprouts.

Ingredients

  • 1 1/2 pound boneless, skinless chicken breasts
  • 1 pound Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 2 tablespoons butter
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Season the chicken pieces with salt and pepper on both sides.
  2. Heat 2 tablespoons of olive oil in a large skillet and add the chicken, cooking for 5-6 minutes until golden brown. Remove and set aside.
  3. Add the remaining olive oil to the skillet, then add the Brussels sprouts cut-side down. Cook for 5-7 minutes until caramelized, flip, and cook for another 3-4 minutes until tender. Remove and set aside.
  4. Lower the heat and add the minced garlic, sautéing for 30 seconds until fragrant.
  5. Add honey, soy sauce, butter, apple cider vinegar, and red pepper flakes to the skillet, stirring until the butter melts.
  6. Add the cornstarch slurry to the sauce and cook for 1-2 minutes until thickened.
  7. Return the chicken and Brussels sprouts to the skillet, tossing together in the sauce until evenly coated and heated through.

Notes

For a quicker meal, you can use pre-trimmed Brussels sprouts. Adjust the sweetness of the sauce by modifying the amount of honey to taste.
