A delightful twist on the classic Twinkies, these homemade treats feature a soft sponge cake filled with rich, fluffy cream, perfect for nostalgic indulgence.

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups powdered sugar
  • 1 cup heavy cream

Instructions

  1. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt until fully combined.
  2. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 4-5 minutes.
  3. Add eggs and vanilla: One by one, add the eggs to the mixture, mixing on medium speed until fully combined. Mix in the vanilla extract.
  4. Combine with dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  5. Bake the sponge cakes: Preheat your oven to 350°F (175°C). Pour the batter into a Twinkie mold or greased loaf pan, filling each section two-thirds full. Bake for 15-20 minutes.
  6. Allow to cool: Remove from the oven and let cool in the pan for about 5 minutes before transferring to a wire rack.
  7. Whip the cream: Beat the heavy cream until soft peaks form, then gradually add the powdered sugar until thick and fluffy.
  8. Fill the Twinkies: Once the cakes are cool, cut a small hole in one end and fill with the whipped cream.
  9. Dust with powdered sugar before serving.

Notes

Serve with fresh berries or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 5 days.
