Delicious Homemade Turkish Delight

Experience the sweet and spongy delight of homemade Turkish delight infused with rose water and optional crunchy pistachios.

Ingredients

  • 2 cups granulated sugar
  • 2/3 cup water (for syrup)
  • 1 teaspoon lemon juice
  • 2/3 cup cornstarch
  • 1 cup water (for cornstarch mixture)
  • 1/8 teaspoon cream of tartar
  • 3 tablespoons gelatin powder (optional)
  • 1 tablespoon rose water
  • 26 drops liquid red food coloring
  • 1 1/2 cups chopped unsalted pistachios (optional, divided)
  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch

Instructions

  1. Prepare an 8 by 8 inch square pan by lining it with aluminum foil or parchment paper and spray with a neutral oil. Sprinkle evenly with 1/2 cup of the chopped pistachios. Set aside.
  2. Combine the sugar, 2/3 cup water, and lemon juice in a small saucepan. Heat on medium-low until the sugar dissolves, then reduce the heat to low and cook for 20 minutes until thickened.
  3. Mix together the cornstarch, 1 cup of water, cream of tartar, and gelatin powder (if using) in a bowl. Whisk to remove lumps.
  4. Slowly add the cornstarch mixture to the sugar mixture while continuously whisking to create a smooth blend.
  5. Continue to whisk occasionally on medium-low heat for 20-35 minutes, until thick and translucent.
  6. Test the consistency by dipping a spoonful in cold ice water; it should thicken and form a ball.
  7. Turn off the heat and add rose water and red food coloring, stirring to combine. Add in 1/2 cup of chopped pistachios and mix well.
  8. Pour the mixture into the prepared pan and smooth it out, sprinkling the remaining 1/2 cup of pistachios on top.
  9. Allow to set uncovered at room temperature for 8 hours or overnight.
  10. Combine powdered sugar and cornstarch in a bowl. Sprinkle 1/3 on a clean surface, flip the Turkish delight onto it, removing the lining, and dust the top with another 1/3.
  11. Cut into 36 small squares with an oiled knife and dust with the remaining mixture to prevent stickiness.
  12. Store in an airtight container at room temperature with parchment paper between layers.

Notes

Experiment with different flavors like orange blossom water or vanilla extract. Dusting with powdered sugar and cornstarch helps prevent stickiness.
