Experience the magic of homemade Turkish delight, a chewy, sweet confection often associated with warm hospitality and tradition. Customize with pistachios for a delightful crunch!

Ingredients

  • 2 cups granulated sugar
  • 2/3 cup water (for syrup)
  • 1 teaspoon lemon juice
  • 2/3 cup cornstarch
  • 1 cup water (for cornstarch mixture)
  • 1/8 teaspoon cream of tartar
  • 3 tablespoons gelatin powder (optional)
  • 1 tablespoon rose water
  • 26 drops liquid red food coloring
  • 1 1/2 cups chopped unsalted pistachios (optional, divided)
  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch

Instructions

  1. Prepare your pan by lining it with foil or parchment paper and spraying with oil. Sprinkle 1/2 cup chopped pistachios in the bottom.
  2. Combine sugar, 2/3 cup water, and lemon juice in a saucepan. Heat until dissolved, then simmer for about 20 minutes.
  3. Mix cornstarch, 1 cup water, cream of tartar, and gelatin (if using) in a bowl until smooth.
  4. Slowly add the cornstarch mixture to the simmering syrup while whisking continuously.
  5. Cook the mixture over medium-low heat for 20-35 minutes until thickened and glossy.
  6. Test the consistency by dipping a spoon into cold water to check if a soft ball forms.
  7. Add rose water and food coloring, then fold in 1/2 cup pistachios.
  8. Pour the mixture into the prepared pan and smooth it out. Sprinkle remaining pistachios on top.
  9. Allow to set at room temperature for about 8 hours or overnight.
  10. Combine powdered sugar and cornstarch, dusting a surface before flipping the Turkish delight onto it.
  11. Cut into 36 squares using an oiled knife and coat with more powdered sugar mixture.
  12. Store in an airtight container with parchment between layers.

Notes

For best texture, whisk continuously while adding the cornstarch mixture. Customize flavors by adjusting rose water or trying different nuts.
