Ingredients

  • 2 cups green split peas
  • 1 meaty ham bone
  • 2 carrots, diced
  • 1 onion, diced
  • 2 potatoes, diced
  • 8 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water to remove any debris.
  2. Combine the rinsed split peas, ham bone, diced carrots, onion, potatoes, and broth in a large pot.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce the heat to a gentle simmer and cover the pot. Let it cook for 60 to 90 minutes, stirring occasionally.
  5. Remove the ham bone, shred any meat from it, and stir it back into the pot.
  6. Season the soup with salt and pepper to taste.
  7. Serve hot, garnished with freshly chopped herbs if desired.

Notes

For extra flavor, try adding spices like thyme or bay leaves during cooking.
