Delicious homemade peppermint patties with a refreshing mint flavor and rich chocolate coating.

Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons corn syrup
  • 1/8 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for dipping)

Instructions

  1. Combine powdered sugar and cocoa powder in a medium mixing bowl.
  2. Add corn syrup, salt, and peppermint extract. Stir until dough-like consistency.
  3. Knead the dough on a lightly dusted surface until smooth.
  4. Divide the dough into small portions and roll into balls, then flatten into discs.
  5. Place discs on a baking sheet and freeze for 30 minutes.
  6. Melt chocolate chips in a microwave-safe bowl, stirring until smooth.
  7. Dip chilled peppermint discs into melted chocolate, allowing excess to drip off.
  8. Return dipped patties to the baking sheet. Optionally, sprinkle crushed peppermint on top.
  9. Refrigerate for 20–30 minutes to harden the chocolate.
