A luxurious, creamy garlic chicken dish paired with hearty potatoes, packed with protein and flavor.

  • 3 large chicken breasts, diced
  • 4 medium russet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the chicken by heating olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned, about 6-8 minutes. Remove and set aside.
  2. Sauté the garlic in the same skillet for 1 minute until fragrant.
  3. Cook the potatoes by adding them to the skillet and cooking for 5-7 minutes, stirring occasionally.
  4. Combine the broth and cream, then stir in thyme and rosemary. Bring to a simmer.
  5. Simmer the potatoes, covering the skillet and cooking for 10-12 minutes until tender.
  6. Make it cheesy by stirring in shredded cheddar and grated Parmesan until melted.
  7. Return the chicken to the skillet, mix, and heat for an additional 2-3 minutes.
  8. Garnish with fresh parsley before serving warm.

Notes

For added flavor, consider marinating the chicken beforehand. Use a non-stick skillet for easier cleanup.
