High Protein Broccoli Cheddar Soup

A comforting and creamy soup packed with protein, featuring fresh broccoli and rich cheddar cheese.

Ingredients

  • 1 tablespoon butter
  • 1 large yellow onion, diced
  • 2 large carrots, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 3 cups vegetable broth
  • 4 cups chopped broccoli
  • 2 cups 1% milk
  • 4 oz shredded cheddar cheese
  • 1 cup blended low-fat cottage cheese
  • Salt & pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add onion, carrot, and celery; sauté for about 10 minutes until softened.
  3. Stir in garlic and cook for another minute.
  4. Add smoked paprika and flour; stir well.
  5. Pour in vegetable broth and add chopped broccoli.
  6. Bring to a simmer and cook until broccoli is tender (about 8–9 minutes).
  7. Lower the heat and gently stir in the milk.
  8. Add both cheeses until melted.
  9. Blend one cup of the soup until smooth then return it to the pot.
  10. Season with salt and pepper before serving.

Notes

Serve with warm, crusty bread or a fresh garden salad. Stores well in the refrigerator for up to 4 days or freezes for up to 3 months.
