Hearty Irish Vegetarian Stew

A warm and filling Irish stew packed with fresh vegetables, perfect for chilly days.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 2 medium potatoes, peeled and cubed
  • 1 cup mushrooms, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent.
  2. Stir in the minced garlic and sauté for another minute until fragrant.
  3. Add the diced carrots and celery to the pot. Cook for an additional 5 minutes, stirring occasionally, until the vegetables start to soften.
  4. Incorporate the cubed potatoes and sliced mushrooms into the pot, mixing well with the other vegetables.
  5. Pour in the vegetable broth and add the diced tomatoes along with their juices. Stir in the tomato paste, dried thyme, and dried rosemary.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes or until the vegetables are tender.
  7. Add the trimmed green beans in the last 10 minutes of cooking. Season the stew with salt and pepper to taste.
  8. Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh parsley.

Notes

Feel free to add or substitute your favorite vegetables. For a thicker stew, mash some of the potatoes before serving.
