  • 1 large Egg

  • 1/2 tsp Black pepper
  • 2 tbsp Butter
  • 1 medium Onion, diced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1/4 cup All-purpose flour
  • 4 cups Beef broth
  • 1 cup Heavy cream
  • 1/2 tsp Nutmeg
  • 2 cups Egg noodles or diced potatoes
  • 1/4 cup Fresh parsley, for garnish

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground beef or pork, breadcrumbs, egg, milk, Worcestershire sauce, onion powder, garlic powder, salt, and black pepper until evenly mixed to form the meatball mixture.
  2. Form the Meatballs: Roll the mixture into small, 1-inch diameter meatballs and set aside to prepare for cooking.
  3. Brown the Meatballs: Heat oil in a large skillet over medium heat. Add the meatballs and cook for 4-5 minutes, turning occasionally until golden brown on all sides. Remove from skillet and set aside.
  4. Sauté the Vegetables: In a large pot, melt butter over medium heat. Add diced onion, carrots, and celery and cook until vegetables are softened and fragrant, about 5-7 minutes.
  5. Create the Roux: Stir in the flour with the sautéed vegetables and cook for 1-2 minutes to form a roux.
  6. Whisk in the Beef Broth: Gradually whisk in the beef broth, ensuring the mixture is smooth without lumps. Bring to a gentle simmer.
  7. Season the Broth: Add nutmeg, salt, and black pepper to the simmering broth for warm, balanced seasoning.
  8. Combine Meatballs with Soup: Gently add the browned meatballs back into the pot along with your chosen base of egg noodles or diced potatoes. Simmer for 10-12 minutes until cooked through.
  9. Enrich the Soup: Stir in the heavy cream and cook for an additional 2-3 minutes, then taste and adjust seasoning if necessary.
  10. Serve the Soup: Ladle the hot soup into bowls, garnish with fresh parsley, and serve immediately.
