A guilt-free zucchini bread filled with moisture from zucchini and applesauce, perfect for breakfast or an afternoon snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup sugar or honey
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a loaf pan to prevent sticking.
  2. Combine the grated zucchini, applesauce, vegetable oil, eggs, and vanilla extract in a bowl. Stir until well mixed.
  3. Whisk together the whole wheat flour, all-purpose flour, sugar, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Mix the dry ingredients into the wet mixture until just combined. Fold in nuts or chocolate chips if desired.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added richness, spread cream cheese or almond butter on slices.
