Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup spinach
  • Salt and pepper to taste
  • Optional: herbs like thyme or basil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until softened.
  2. Stir in the carrots and celery, cooking for another 5 minutes.
  3. Pour in the vegetable broth and add the diced tomatoes. Bring to a boil.
  4. Reduce heat to a simmer and add the green beans. Cook for about 10 minutes.
  5. Add spinach and season with salt, pepper, and herbs. Cook for an additional 5 minutes.
  6. Serve hot into bowls.
