A simple and delicious side dish featuring roasted asparagus and carrots, enhanced with garlic and lemon.

Ingredients

  • 1 bunch asparagus, trimmed
  • 4 medium carrots, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the trimmed asparagus and sliced carrots in a large bowl.
  3. Drizzle with olive oil, salt, black pepper, garlic powder, and lemon juice.
  4. Toss everything until the vegetables are well coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 15-20 minutes until tender and slightly caramelized.
  7. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
