A healthier twist on the classic potato salad, made creamy with Greek yogurt and packed with fresh ingredients.

Ingredients

  • 2 pounds potatoes, diced
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/4 cup green onions, chopped
  • 1/2 cup celery, diced
  • Salt and pepper to taste
  • Fresh herbs (such as dill or parsley) for garnish

Instructions

  1. Boil the potatoes until tender in a large pot of salted water for about 15-20 minutes, then drain and cool.
  2. Mix the Greek yogurt, olive oil, Dijon mustard, and salt and pepper in a bowl until creamy.
  3. Add the cooled potatoes, green onions, and celery to the mixture, folding gently.
  4. Toss everything together until well combined, ensuring potatoes are coated.
  5. Garnish with fresh herbs and chill in the fridge before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Combine all ingredients except herbs if made ahead of time.
