A vibrant and nutritious pasta salad loaded with fresh vegetables, olives, feta cheese, and a zesty dressing, perfect for summer gatherings.

Ingredients

  • 8 ounces whole grain pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the whole grain pasta according to package instructions. Once finished, drain it and let it cool completely.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  3. Whisk together the olive oil, lemon juice, salt, and pepper until well combined.
