  • 1 cup mixed nuts (e.g., almonds, walnuts, pecans)
  • 1/2 cup seeds (e.g., sunflower, pumpkin)
  • 1 cup rolled oats
  • 1/2 cup nut butter (e.g., almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the mixed nuts, seeds, and oats in a large bowl.
  3. Blend the nut butter, honey (or maple syrup), vanilla, and salt in a separate bowl until smooth.
  4. Mix the wet ingredients into the dry ingredients until fully combined.
  5. Add the chocolate chips if using, and fold into the mixture.
  6. Scoop tablespoon-sized amounts of the mixture onto a lined baking sheet.
  7. Bake for 10-12 minutes, or until golden brown.
  8. Allow to cool before enjoying!

Notes

For added flavor, consider toasting the nuts and seeds before mixing. These cookies store well in an airtight container for up to a week, or freeze them for up to three months.
