Delightful and nutritious muffins made with whole wheat flour and your choice of fruits. Perfect for breakfast or as a snack!

Ingredients

  • 1 cup whole wheat flour
  • 1 cup oats
  • 1/2 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1/2 cup almond milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped fruit (like bananas or blueberries)
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the whole wheat flour, oats, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the Greek yogurt, honey or maple syrup, egg, almond milk, and vanilla extract in another bowl.
  4. Pour the wet mixture into the dry mixture and gently fold until just combined.
  5. Fold in your chosen chopped fruit.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store any leftovers in an airtight container for up to 3 days at room temperature or a week in the fridge. Freezes well for up to 3 months.
