A vibrant chicken bowl marinated in lemon and dill, served on a bed of quinoa with fresh vegetables.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup mixed greens

Instructions

  1. Whisk together the olive oil, lemon juice, dill, salt, and pepper until well combined.
  2. Immerse the chicken breasts in the marinade and let them marinate for at least 30 minutes.
  3. Preheat your grill or skillet over medium-high heat and grill the chicken until cooked through, about 6-7 minutes per side.
  4. While the chicken cooks, layer the cooked quinoa, mixed greens, cherry tomatoes, and cucumber in a large bowl.
  5. Once cooked, allow the chicken to rest for a few minutes before slicing it into strips.
  6. Arrange the sliced chicken atop the quinoa and vegetable mixture, and drizzle with fresh lemon juice before serving.
